WHere is an easy version of a drink found on the seasonal cocktail list. Designed as a party-sized pre-mixed that's loaded with the tastes of the Christmas time, making it ideal for hosting a celebration. Reserve the remaining cordial to use in brunch beverages, desserts, or to mix more rounds of this cocktail.
The Bikini Cocktail
Serves 10 servings
For the Clementine Syrup (produces 750ml)
300ml newly squeezed clementine juice
200ml recently pressed lemon juice
500g caster sugar
To make the Drink (produces 850ml, serving 10)
400ml good quality vodka
100ml London dry gin
150ml peach liqueur
200ml citrus syrup (as made above)
Fresh cranberries, to garnish
Mandarin essential oil, for finishing
Instructions
For the Cordial: Put the listed items inside a pan, heat until it reaches a simmer, stirring to dissolve. After that, remove from the burner and leave to cool entirely. Transfer into a clean bottle, cap it and store in the fridge, where it will keep for around one month.
To make Premix: Pour every liquids in a large bottle, let it rest for an hour, then filter it preferably using muslin, so it's perfectly clear.
To serve: Add 85ml of your cocktail base to a cocktail shaker filled with ice, and stir lightly for one minute to cool it down. Pour into an chilled martini glass or equivalent, top with the cranberries and complete it using a light spray of mandarin oil above the glass.
